Growing up you were probably taught that you can’t bake without eggs. They add texture and structure. They also contribute to leavening, and add color and flavor.
Well, let’s prove them wrong! Here are 17 ways you can replace eggs in your vegan recipes.
The Baking Equivalent for 1 Egg
1 — 1 Tbsp ground flax seeds + 3 Tbsp water.
2 — ¼ cup applesauce
3 — 2-3 Tbsp wheat flour
4 — ¼ cup mashed banana
5 — ¼ cup blended silken tofu
6 — 1 tsp baking powder + 1½ Tbsp water + 1½ Tbsp oil
7 — 1 tsp vinegar + 1 tsp baking soda
8 — ½ cup cooked oats
9 — ½ cup soya yogurt
10 — 2 Tbsp cornstarch + 2 Tbsp water
11 — 1 tsp baker’s yeast + ¼ cup warm water
12 — 1 tsp Egg Replacer + 2 Tbsp water
13 — 2 Tbsp arrowroot powder + 3 Tbsp water
14 — ¼ cup carbonated water
The Baking Equivalent for 1 Egg Yolk
15 — 1 Tbsp soy lecithin
The Baking Equivalent for 1 Egg White
16 — Whip 1 Tbsp agar-agar + 1 Tbsp water. Chill and whip again
17 — 3 Tbsp aquafaba (the liquid from a can of chickpeas)
