Whip up a creamy vegan mayonnaise in minutes to add to your wraps and salads.
340 g firm tofu
6 Tbsp olive oil
6 Tbsp water
2-3 Tbsp lemon juice
¼ tsp sea salt
¼ tsp paprika
¼ tsp mustard
Put all the ingredients except the oil and water in a blender. Blend on the lowest speed.
Gradually add the oil and water until the mixture starts to thicken. Continue blending until thickened and smooth.
Transfer to a jar and store in the refrigerator till chilled.
Now you have a vegan mayo ready for whenever you need to add flavour and creaminess to your salads and sandwiches.
