These vegan sweetcorn fritters are a tasty kid-friendly treat that can be enjoyed by the young and young at heart.
– makes 14 fritters
Ingredients
1 cup Creamed corn
½ cup sweet corn kernels
1 ½ cup flour
1 Tbsp fresh parsley
1 Tbsp fresh chives
3 Tbsp nutritional yeast (optional)
½ cup finely chopped onion
1 tsp baking powder
1 tsp chilli powder
¾ cup soy milk
2 flax seed eggs
(1 flax egg = 1 Tbsp ground flax seeds mixed with 3 Tbsp water)
Salt and pepper to taste
Oil for frying
Method
In a large bowl mix everything together except for the creamed corn, sweet corn and onions. When everything is well mixed, fold in the corn and onions to make a thick batter.
Heat oil in a large pan on medium heat and drop spoonfuls of batter into hot oil.
When they are browned flip and cook the other side.
Serve hot or cold to hungry kids with tomato sauce.
