This is a romantic vegan meal that’s sure to impress your partner with your culinary skills, but it really isn’t difficult and doesn’t require much work to prepare.

Spaghetti for 2
2 cups cherry tomatoes, halved
10 asparagus spears, chopped
½ cup unsalted roasted sunflower seeds
1 cup baby spinach, chopped
¼ cup fresh basil, chopped
2 Tbsp olive oil
Salt and pepper to taste
½ tsp cayenne pepper
Juice of half a lemon
Preheat oven to 180° C
In a bowl mix the tomatoes and asparagus together with the oil making sure it is completely covered in oil. On a baking sheet spread out the tomatoes and asparagus and Roast for 20 minutes, stirring the tomatoes after the first 10 minutes.
In a large bowl add the spinach, basil, pasta, sunflower seeds, tomatoes and asparagus and mix well. Season with the cayenne, salt, pepper and lemon juice then mix well.
Enjoy this pasta with crusty bread and a fresh green salad.
