Cool season herbs in this refreshing salad will convince you that spring is here! I love that parsley is used as an ingredient in this salad and not just a garnish.
1 cup wild rice mix
115 g / 4 oz snow peas
1½ cup frozen green peas
½ cup parsley, chopped
½ cup mint, chopped
¼ cup red onion, chopped
½ cup sliced almonds, toasted
1 Tbsp mustard
Zest and juice of 1 lemon
1 Tbsp agave nectar
Prepare rice according to package directions. To prepare dressing, blend mustard, lemon juice, agave nectar, ½ tsp sea salt, and ½ tsp pepper in a small bowl. Toss together rice, dressing, and red onion and chill in refrigerator for at least one hour.
Remove brown tips from snow peas and slice in half lengthwise. Cook frozen peas and snow peas in boiling water for 2 minutes. Drain and rinse in cold water. Toss together rice mixture, snow peas, peas, lemon zest, almonds, and herbs in a large bowl.
This is a perfect meal for when you need a healthy energy boost.
