Kale Salad With Zesty Tahini-Lemon Dressing

SALAD
– makes 4-5 large bowls
1 large head raw kale (about 3 cups)
1 cup shredded or chopped carrots
1 cup shredded red cabbage
1 pint cherry tomatoes, sliced in half
½ cup pine nuts
½ cup dried blueberries or currants
DRESSING
– makes about 1 cup
¼ cup tahini
4 garlic cloves
½ cup lemon juice (juice from ±2 lemons)
½ cup water
¼ cup nutritional yeast
1 tsp garlic powder
1 Tbsp Bragg’s liquid aminos

Method

Wash your kale. Remove the stems, then slice it thinly. Mix all salad ingredients in a large bowl.

In a high-powered blender, add all the lemon-tahini dressing ingredients and blend until lusciously smooth. Add ¼-½ cup of dressing to your salad, depending on your taste preference and energy needs. Leftover dressing will store well in your refrigerator for up to five days.
