Experience soft, melty cherries and berries in these 100% guilt-free brownies. They are bursting with nutrition, and there is not one ingredient that isn’t good for our bodies! The black beans add a spongy texture and tons of protein, fibre and life-enhancing nutrients.
– makes 9-12 brownies
1 cup black beans, well rinsed and drained
2 flax eggs
(2 Tbsp ground flaxseed + 5 Tbsp water)
2 large, ripe bananas
1 gala apple, cored and sliced
1 cup cocoa powder
1 cup water
1 Tbsp pure vanilla extract
12 soft medjool dates, pitted
½ cup unsalted, raw cashew butter
1 cup almond flour or walnut flour
1½ cups oat flour or spelt flour
1 Tbsp baking powder
1-2 cups fresh or frozen (defrosted) cherries and berries
Pre-heat oven to 350º F / 180º C.
In a blender, mix the first 9 ingredients. In a separate mixing bowl, mix the nut and oat flour. Add the baking powder. Add the wet ingredients to the mixing bowl and combine thoroughly. Add in berries and/or cherries at the end.
Pour into 8×8″ baking dish and bake for 30 minutes. Remove from the oven and allow it to cool.
Then, if you want to add a little guilty topping, drizzle melted dark vegan chocolate over the top. Enjoy. They are very berry good!
