Chickpea Omelette

Start your day with this stunning protein-rich chickpea omelette that will satisfy and energise you for hours. You can make the filling from any combination of your favourite veggies. With its nutty taste, you will find it even more appetizing than eggs, especially first thing in the morning!

Ingredients

cups chickpea flour
½ tsp baking powder
½ tsp turmeric powder
½ tsp cayenne pepper – optional
½ tsp garlic powder
3 Tbsp fresh chives, chopped
1 Tbsp fresh parsley, chopped
Salt and pepper
1 cup baby spinach
cup soymilk or water
1 Tbsp olive oil

Method

In a bowl mix together the chickpea flour, baking powder, turmeric, cayenne, garlic, salt and pepper. Slowly add in the milk or water, whisking continuously to make sure you don’t get any lumps. Stir in the chives and parsley.

In a small pan on medium heat, add the oil (make sure the pan is hot before you add the batter, otherwise you will end up with a sticky mess). Pour half the batter into the pan and cook until bubbles start to appear.

Add the spinach or any other vegetable of choice. Fold omelette in half and continue to cook for a minute or two. Make sure not to over cook it, you want the middle to be soft. Remove from pan and serve.

Repeat the process with the other half of the mixture for your second omelette. Or you could give it your partner! Serve with sautéed mushrooms and hot vegan-buttered toast.
